Vanilla is one of the world's most popular spices, with a rich aroma and flavour. It comes in many forms, from dried pods to paste base to powder.
The choice depends on the desired use and taste.
We would like to introduce some popular varieties and explain how they are used.
Vanilla varieties:
1. Madagascan: The most popular vanilla variety, with a distinctively complex aroma and a deep, sweet flavour. Excellent for cakes, creams and ice creams.
2. Tahitian: It has a fruitier and more floral aroma than Madagascar. It goes well with desserts, cocktails and syrups.
3. Mexican: Spicier and earthier flavours with notes of cinnamon and cloves. Excellent with chocolate, coffee and stews, meats.
Tips for choosing vanilla:
- Dried vanilla pods: The most intensely flavoured and aromatic form of vanilla. Use in cakes, creams and ice creams.
- Vanilla extract: Convenient and easy to use, but with a less intense flavour than dried vanilla beans. Use in cakes, biscuits and pancakes.
- Vanilla powder: It is the easiest to use, but has the least intense flavour. Use in drinks, sauces and dressings.
When to use vanilla?
Vanilla can be used in a wide variety of foods and drinks. It is excellent in desserts, cakes, creams, ice creams, but also in savoury dishes, curries, marinades and sauces.
