Organic vanilla paste homemade? YES!

Vanilla is one of the most popular spices in the world, and for good reason. Its aromatic, sweet scent and flavour can conjure up magical desserts, cakes, main dishes and drinks. However, commercial vanilla extracts are often full of artificial additives and flavourings. Fortunately, you can make your own organic vanilla paste at home, which is not only delicious but also healthy.

Ingredients:

  • 50 g vanilla caviar (https://shop.manilia.hu)
  • 250-300 g invert sugar

Choose a quality vanilla pod. The quality of the vanilla has a big influence on the taste of the paste. We are happy to help you choose

  1. Mix the ingredients. In a jar or clean bowl, mix the vanilla caviar and inverted sugar. Make sure that the vanilla caviar is evenly distributed in the liquid.
  2. Let it mature. Place the jar in a cool, dark place and leave the paste to mature for at least 4-5 days. During this time, the vanilla flavour will leach out into the liquid and the paste will become more aromatic.
  3. Use to taste. Vanilla paste can be used in cakes, desserts, drinks and even yoghurt. Add a little to pastry, cream or pour a little into your drink to give it a magical vanilla flavour.

The preparation of invert sugar is as follows:

  • 240 g granulated sugar
  • 500 g pure water
  • 0.5 g Ascorbic acid (citric acid)
  • walnut-sized glucose syrup

Preparation:

Place the ingredients in a very well cleaned saucepan and bring to the boil, stirring constantly. Wash off any syrup that may stick to the sides of the pan with a damp brush. Once it boils, stop stirring. Heat gently over a low heat until the temperature reaches 114 °C. This takes about 15-20 minutes. The vanilla caviar is stirred in during the cooling process at around 65-75 °C, allowed to cool in the jar, stored in the fridge.
